Still Room at Highland Park
This is as close as we were allowed to get to the still room on the tour of the distillery. Highly inflammable area plus the electronics in mobile phones and cameras don't make for a good combination.

Chimneys over malting room, Highland Park Distillery
Highland Park is one of only a few remaining distilleries that malts its own barley. The process involves soaking the grain and then when germination starts, spreading it on the floor of the malting room while peat furnaces beneath keep the temperature right and flavour the grains. The peat smoke exits through these chimneys.

The Maltings Room
Highland Park is one of only a handful of distilleries where the expensive and physically demanding custom of turning malt by hand still takes place. Highland Park malt costs two and a half times as much as industrially processed malt. Some 20% of the malt used to make Highland Park comes from Orkney.
