Depicting the bird the pub is named after, the Great Bustard, Otis tarda, this sign looks like a most unlikely hybrid of a Great Bustard and one of its relatives from India or Egypt. The pub was built in 1860, and the last living Great Bustard in England was shot in 1832 so it is likely that the artist was working from a stuffed specimen or a particularly distant memory. A modern photo of a Bustard can be seen at http://www.bbc.co.uk/nature/life/Great_Bustard and https://ww2.rspb.org.uk/our-work/conservation/projects/reintroducing-the-great-bustard-to-southern-england
