The fourth stage of the brewing process at the Sarah Hughes Brewery is to run the cool wort from the Image into the fermenting tanks. Yeast is added and the 6 day fermentation begins. At the end of the fermentation the yeast is skimmed from the surface and kept for the next brew. The young beer is run into the Image
