Preserved on little brick plinths outside this former water mill are two little pumps that apparently came from a sugar works. On the left is a water pump by Legrand, Sutcliff & Gell Ltd of London. The device on the right looks a lot like a steam engine but it lacks a governor and as it is by F W Brackett of Colchester and came from a sugar works, it is a good bet that it is a vacuum pump. Sugar works used multiple effect evaporators working under a partial vacuum to concentrate the syrup prior to crystallisation. This is a relatively small unit.
