The third stage of the brewing process is cooling. The hot wort from the copper is run off into the hop back to cool to 20 celsus. This hop back is in the Sarah Hughes Brewery. Behind the steam are brave Camranauts some of whom were on their 3rd or more brewery visit of the day. It's a tough life being a consumer champion! From the hop back the wort is run into the Image
