This is the copper of the Sarah Hughes Brewery the second stage of the brewing process is boiling where the hops are added. Hopes are a preservative and impart the bitter flavour to the beer. This particular copper dates back to 1830. The boiling takes about two hours, it is at this stage of the process that any adjuncts such as extra sugar may be added.
