This public house and restaurant derives its name from the fact that the building long ago used to be a saddler's workshop. The sign is badly faded, but looking at the photograph in close-up shows four people working away in a saddler's workshop. In the foreground one is attaching a leather piece to the side of a sofa. Another appears to be repairing the leather on the top of a desk. The other two people are busy in the background doing other things. As this interpretation differs from another on this website, it may be that the other side of the sign has a different scene. That is rare but sometimes happens. I didn't check at the time, as the light was beginning to go and I was in a hurry. Image
